make a carrot cake with forgotten delights
meet georgie, founder of forgotten delights. georgie is a producer by day, and in her spare time she cooks her way through a 1968 recipe diary she found in a second-hand bureau. read on to make georgie's delicious carrot cake (we were lucky enough to have a slice over coffee when we went to visit!)
what you'll need for the sponge:
175g Dark brown sugar
2 Eggs
150 ml Sunflower oil
200g Wholemeal self raising flour
3 Level teaspoons mixed spice
200g Carrots
110g Sultanas
50g Desiccated coconut
50g Pecan nuts
for the icing:
250g Mascarpone
250g Creme Fraiche
1 x teaspoon cinnamon
1 x tablespoon caster sugar
50g Pecan nuts
Method:
1) mix together the eggs, sugar & oil
2) add flour, spices & bi carbonate of soda
3) split into two tins and bake for 30 mins at 180
